SIMPLY PARSNIPS (650 watts)

400g parsnips
2 Tbs cream or milk
1 Tbs butter
1/4 tsp nutmeg
2 Tbs chopped parsley

Peel and grate the parsnips, discarding any tough core. In a medium
dish mix the parsnips, cream, butter and nutmeg. Cook on HIGH 8
to 10 minutes or until soft. Stir just before serving sprinkled
with parsley.

Cooked this as a late night snack, and cos I had some parsnips that needed using up. The only bad part was grating the parsnips (me and graters don't get on... ;) ), but I expect the recipe would work with chopped parsnips if you up the cooking time accordingly. Other than the grating it was very quick and easy to prepare. Took about 8.5-9mins in my 750W microwave. Doesn't look too interesting on its own but would be excellent as an accompaniment to a roast dinner (I'm thinking it would complement beef or lamb nicely). Tastes nice (but then I'm biased, parsnips are my favourite veg); my big bowlful is nice and filling, but I reckon you could stretch it to maybe 4 servings as an accompaniment. A big thumbs up, though I think I'll chop the parsnips next time!
