Potato Onion Bake

POTATO AND ONION BAKE
1 onion
1 Tbs butter
2 large potatoes
salt
fresh ground black pepper
1 Tbs butter extra
1/4 cup milk
1/4 cup soft breadcrumbs
1 Tbs Parmesan cheese
Peel and thinly slice onion. Place onion and first measure of
butter in a microwave proof jug or bowl. Cook on HIGH 2 mins.or
until soft. Wash and thinly slice potatoes, place half the potatoes,
layered on the base of a microwave-proof dish.
Top with onion then arrange the remaining potato on top. Season
to taste with salt and pepper, cover and cook a further 5 mins. on
HIGH. Remove cover, dot with butter and pour over the milk. Cover
and continue cooking on HIGH a further 5 mins. or until potatoes
are tender. Spread with breadcrumbs and Parmesan cheese. Grill
until golden.
