Chicken Rueben

4 boneless chicken breasts
32 oz sauerkraut, drained but not rinsed
1/4 lb Swiss cheese
1 cup Thousand Island dressing
1 T chopped fresh parsley

Trim fat from chicken, pound lightly and cut each in half. Place
a layer of sauerkraut in the bottom of large casserole. (2 1/2 qt).
Pour about 1/3 of the dressing evenly over the kraut. Place about
1/3 of the cheese (sliced thinly or crumbled) over the kraut and
dressing. Arrange 4 pieces of chicken over the layer.

Repeat with a second layer in order. Spread remaining kraut on top
and top with more cheese (optional).

Cover and microwave on high for 20 minutes or until chicken is
done. Sprinkle with chopped parsley.
