Zucchini Fans
Serves 4
4 zucchini, 5 - 7 inches in length
fresh lemon juice
Wash zucchini. Cut in half lengthwise.
With stem on, begin slicing 1/2 inch from stem end of zucchini,
following the curve, through to the other end. Slices should be
about 1/4 inch thick. Place on microwave safe plate and cover with
wax paper. Microwave on high for 2-4 minutes until tender. Remove
from microwave and spread slices into a fan shape, sprinkle with
lemon juice and serve.
You can also serve them by placing a thin slice of tomato between
each zucchini slice.
