Kabul Party Rice (Birinj Kabuli) (Afghanistan)
1 large carrot, peeled and grated 1 large onion, chopped 2 T. butter 1 T. chopped serrano chile 1 t. ground cinnamon 1/2 t.ground cardamom 1/2 t. ground cumin 1/4 t. ground cloves 2 1/2 cups cooked white rice 1/2 cup pine nuts 1/2 cup seedless raisins, rehydrated
Place the carrot in a saucepan and cover with water. Bring to a boil, reduce the heat and simmer for 5 minutes. Drain and rinse under cold water.
Saute the onion in the butter until lightly brown. Add the chile and fry for an additional minute. Stir in the spices and saute for 30 seconds. Add the carrots and rice, stir in the pine nuts and raisins, and heat through.
