Israeli Cous Cous

1 small onion chopped
2 Tbsp oil
1 cup couscous
2 cups hot broth
salt and pepper to taste

Saute the onion in the oil. Add the couscous and cook and stir a
few minutes. Add the hot broth and bring to a boil. Cover and
simmer about 10 minutes or more or until liquid is absorbed Season
to taste. A nice change from barley or rice- with poultry or meat
dishes
