Fattoush (Arabic Bread Salad)
2 large pita breads
salt and pepper
1/4 cup fresh lemon juice
1/3 cup olive oil
1/2 head romaine lettuce, torn into bite size pieces
1/2 cup parsley, coarsely chopped
4 medium green onions, sliced
1/2 cup fresh mint, coarsely chopped
1 medium cucumber, peeled and chopped into 1/2 " cubes
3 medium tomatoes, cut in 1" cubes
1/2 teaspoon sumac
Toast pitas in 375 degree F oven until golden and crisp (15 minutes).
Let cool. Break into 1/2 " pieces.

over salad vegetables. Pour dressing over salad and toss well.
