Grilled Marinated Halloumi
Serves two, with vegetables

1 packet halloumi, sliced into 1/2 centimetre slices + the whey from the packet
juice of a lemon
5 very finely diced shallots
handful chopped chives
handful chopped parsley
handful chopped basil
2 tsp capers
splash soy sauce
olive oil to cover
enough rice for two or three

Place all the ingredients in a bowl, and marinade in the fridge
for up to a day. Get a grill pan as hot as you possibly can, and
grill the halloumi until it's melty and coloured on the outside.
Place in serving dish. Put all of your marinade in the grill pan,
bring to a simmer quickly and stir through rice.
