KOFTA

2 lbs lean ground beef or lamb
1 large onion
4 cloves garlic
1 bunch parsley
1 C basmati rice
1 1/2 tsp cumin
1 tsp coriander
1 tsp salt
1/2 tsp freshly ground pepper
3/4 C water

Roughly chop onion and garlic. Put in a food processor with the
leaves of the parsley. Process until you have almost a thick paste.

Mix puree into meat with rice and spices. Shape into little footballs,
about an inch and a half long.

Put the kofta into a skillet with water. Let the water boil, then
turn it down to low and cover. Cook for about 10-15 minutes, turning
once.

Variation:

KOFTA BIL BAYD

Using same ingredients as above, mix as directed. Shape into patties.
Cook as described above.

Whisk together 1 large egg, 1/2 teaspoon baking soda, 1 tablespoon
flour and 1 tablespoon of milk. Dip patties into egg mixture and
fry on both sides to cook egg.
