Middle Eastern Orange and Almond Cake
flourless, gluten-free

2 large oranges
6 eggs
8 oz ground almonds
8 oz sugar
1 tsp baking powder

Wash and boil oranges (unpeeled) in a little water for about an
hour. Allow to cool, then cut open and remove pips. Pulp by
rubbing through a seive or whizzing in a blender. Beat eggs, add
all other ingredeients, mix thoroughly and pour into a buttered
cake tin, preferably one with a removable base.

Bake 190deg C or 375deg F or gas 5 for about an hour, or a liitle
longer if still very wet.
