Taratoor (Sesame Sauce)
1 cup canned sesame tahini (paste)
3 cloves garlic, put through a press or finely minced
1/2 cup lemon juice
1 tsp. salt
3/4 cup ice water
Put the tahini and garlic in a bowl, and using a whisk or electric
beater, mix well. Still beating, add the lemon juice, salt, and
1/2 cup of the water. Continue beating, and add 1 tablespoon of
the remaining water at a time, until the mixture is the consistency
of thick mayonnaise. It may not be necessary to add all the water,
or it may take a little more, to achieve the proper consistency.
Store refrigerated in a jar, and use as directed in other recipes.
Makes about 1-1/2 cups.
