Shanklish (Lebanese Cheese Balls)
12-oz Lebanese goat cheese "gibna arish" (or mix feta and chevre) 1/2 tsp ground cumin 1/8 tsp cayenne 3 Tbsp. minced mint leaves 1/4 cup olive oil
Mix everything but the leaves and oil together in food processor or blender until thoroughly blended. Make bite-sized balls. Roll in the minced mint and chill until firm. Before serving, drizzle them with olive oil.
