Tabbouleh

1 cup bulgur
2 cup water
2 medium onions, finely chopped
4 cups chopped parsley
1-2 tomatoes, chopped
2 lemons (juice from), or more to taste
1/2 cup olive oil
salt to taste (approx 1 tsp)

Soak the bulgur in water for 2 hours. Drain and squeeze dry. Add
the onions and crush into the bulgur. Toss in the remaining
ingredients.

Note: If you want mint, a typical amount is 1 cup mint and 3 cups
parsley.
