Rose-Flavoured Turkish Delight
(Loukhoum)

3 envelopes unflavoured gelatin
2 cups sugar
1 cup water
1/2 tsp. good rose flavouring
red food colouring
1 cup icing sugar mixed with
1 cup corn starch

Bring gelatin, sugar, and water to boil, then simmer for 20 minutes.
Add rose flavouring and a few drops of colouring. Strain into
buttered pan and chill 24 hours.

Turn out onto slab covered with 1/2 icing sugar mixed with 1/2
cornstarch. Cut into 1' squares, being careful not to let them
touch each other (or they stick!). Roll each in sugar mix, and pack
in an air-tight tin with remainder of sugar mix.
