Fried Tofu and Cabbage

1 Large package firm or extra firm tofu
1/2 head cabbage (red cabbage preferred)
2 cloves minced garlic
1 tablespoon whole coriander
1 tablespoon whole cumin
Extra Virgin Olive Oil
Balsamic vinegar
Soy sauce
Shred Cabbage
Heat 1/8 inch Olive oil in a large deep frying pan on medium heat
Add whole coriander, cumin, and minced garlic to hot oil and saute for 20 to 30 seconds
Caution! coriander will pop like popcorn, be careful
Add whole block of tofu to hot oil, immediately chop tofu into small pieces while frying using a metal spatula
fry for 1 min
Add cabbage and stir
liberally pour vinegar and soy sauce over mixture.
Reduce Heat to medium low and cover (this will effectively steam the cabbage in the vinegar and soy sauce)
Cook for 10 to 15 min. stirring occasionally
Serve over noodles, steamed rice, or by itself
As an alternative use cooked black beans instead of cabbage for a refried version.
