Make a rub consisting of (in order of most to the least amounts) brown sugar, paprika, powdered ginger, white pepper, salt, and cayenne pepper. Trim the fat and marinate the ribs over night in a decent marinade. Cut the rack in halves or even quarters and place them in a large zip-lock bag to marinate.
When ready for cooking, place them in a pan and bake the babies for one hour at 300. This will tenderize them (the tough white portion on the back will curl up) and it will also get rid of a lot of the fat.
After you bake them, allow them to cool. Once cooled, pack a generous portion of the rub onto the meat side of the ribs. Place them into a hot smoker for one hour, until the sugar is completely melted and slightly charred. Cut them into smaller sections (2-3 ribs) for easy eating.
Another method of cooking would be to place them on a not-so-hot grill with smoldering wood chips instead of the smoker. Be careful with this method, as you can easily burn them (sugar).
