Marinade
1/2 cup Burgundy wine 2 tablespoons liquid smoke 2 stalks celery 1/2 cup sliced onions 2 teaspoons salt 1/2 teaspoon pepper
Put meat in heavy pan and cover with water. Then add marinade to water. Simmer for 1 hour (until tender). Be sure to save 1/2 cup of marinade for BBQ sauce.
BBQ Sauce
1 quart catsup 2 tablespoons liquid smoke 1/2 cup brown sugar 2 tablespoons honey 1/2 cup marinade
After the meat has simmered for an hour, baste the meat in the BBQ sauce and cook the meat as you normally do. I smoked the meat for three to four hours.
