The night before you cook your ribs, remove the membrane from your rack and apply a liberal coating of common yellow mustard to all surfaces. Apply a generous portion of the below Rib Rub (or your favorite) to your ribs. Wrap in two layers of heavy duty aluminum foil and store in the refrigerator until the next morning.
Lemon-Pepper Rub
5 Tbs lemon-pepper 4 Tbs white sugar 3 Tbs paprika 2 Tbs kosher salt 1 Tbs garlic powder 1 Tbs mustard powder 1 ½ tsp celery powder
Preheat oven to 300 degree and time bake ribs for one hour. Do this very early on the day you plan to eat the ribs.
Remove from the oven and refrigerate for at least 4.5 hours. This resting period alters the consistency of the meat and has a tenderizing effect.
Remove from the oven or refrigerator and place the foil packs directly on a medium heat grill. Heat and open the foil. Drain off the reduced liquids/fats and brown the ribs. 20-30 minutes total cook time on the grill. Apply your favorite sauce in the last 5 minutes of the cooking process. Serve immediately with more heated sauce.
