The Rub

1/4 c kosher salt
1/4 c Granulated garlic
1/4 c whole peppercorns
6 Bay leaves
3 tbs. dry mustard
2 tbs. cumin
1 tsp. cayenne
1 tsp. sage
1 tsp. ginger

Crack pepper corns and grind bay leaves together in a coffee grinder.
Mix all other ingredients in a bowl.

After three hours of sitting, smoke over apricot wood. In the water
pan put one bottle red wine, an orange sliced, one head garlic,
one onion, a sprig of thyme and fresh sage.
