Grilled Pepper Buffalo Steak with Honey Onions

Pepper Rub

2 tbsp cracked peppercorns
1-1/2 tsp dried thyme leaves
1 tsp ground cumin
1 tsp garlic salt

Mix all ingredients.

6 Buffalo T-bone or Rib eye steaks, 3/4 to 1 inch thick (about 3 lbs)
3 Lrg. onions, cut into 1/2 inch slices
2 tbsp honey
Olive Oil

Heat coals or gas grill for direct heat. Make the Pepper Rub. Use
a sharp knife to score the steaks. Lightly brush the olive oil on
both sides. Press rub mixture into both sides of the steak and let
stand for 15 minutes.

Lightly brush oil on onion slices. Cover and grill the steak and
onions 4 to 5 inches from medium-high heat 10 to 12 minutes, turning
once, until buffalo steaks are cooked to your satisfaction.

Brush honey on onions. Serve onions with meat.

Serves 6
