BBQ/Grilled Salmon Steaks
6 salmon steaks, 1 inch thick 1 cup dry white wine 1/2 cup olive oil 3 cloves garlic 4 tbsp melted butter 1 tsp thyme
Marinate steaks in wine for at least 2 hours (in refrigerator). Mix all other ingredients as a baste. Drain salmon and place on hot grill (or BBQ). Baste upper side and turn salmon in three minutes.Baste upper side again and turn again in about four minutes. Turn down heat and cook until tender and flaky. Salmon is often overcooked -- be one of the few who doesn't.
An inexpensive hinged toast rack holds steaks or fillets snugly, allows trouble free turning and accommodates frequent basting.
