Leg of Lamb

4-1/2 lb boneless leg
1/3 cup tarragon vinegar
2/3 cup cold pressed extra virgin olive oil
30 cloves of garlic
3 stalks of rosemary
1 long stalk Thai basil
salt and pepper

Combine all ingredients. Refrigerate.

Put it in the smoker at around 220 F. with lime wood for the smoke
until it's around 145 F in the middle.
