PORK SATE Serves 6
2 pounds lean pork 1/4 cup soy sauce 1 teaspoon brown sugar 2 tablespoons lemon juice 1 tablespoon ground coriander 1 clove garlic, mince 1/2 teaspoon ground black pepper 1/8 teaspoon cayenne pepper 1 teaspoon salt olive oil, vegetable oil or melted butter
Cut away and discard excess fat from pork and cut into 1 1/2" cubes. Combine remaining ingredients except oil. Pour over meat. Mix well, cover and marinate at least 4 hours or overnight. Place meat on skewers, leaving small spaces between cubes. Cook over low burning coals for 15-20 minutes, basting with oil or butter and turning frequently. Cook until meat is browned on all sides and well done.
NOTE: I usually grill vegetables separately and serve all with rice.
