Fish in a Smoker Cooker
1 layer of fish on screen (fillets or whole fish)
1 cup dry white wine 1 Tbsp liquid smoke 1 lemon - cut up 1 Tbsp parsley - dried salt cayenne pepper water about 3 lbs charcoal 2 or 3 pieces hickory or pecan wood
Salt and pepper fish. Soak wood in water. Light charcoal and let burn down, then place wood on charcoal. Put wine, liquid smoke, parsley, and lemon in water pan in smoker cooker. Fill pan with water, being careful not to splash on fire. Place fish on greased screen over grill. Close smoker cooker and smoke for about 2 hours. Check to see if done before the 2 hours are up.
