Spicy Shrimp

Peel and butterfly some shrimp. Dust with Cajun seasoning. Place a sliver of jalapeno and jack cheese in the butterfly area. Wrap with a strip of bacon and toothpick it (usually a 1/2 strip will do). Throw on a *VERY* hot grill so the bacon will sear before the shrimp over cooks and the cheese becomes a permanent part of your grill. I can give no guidelines as to how long to cook other than it takes me about 2 minutes per side. If you can't get the bacon done before the shrimp turn into erasers, the fire isn't hot enough. You might try partially cooking the bacon in a pan before wrapping the shrimp.
