Meatless Lasagna

8-10 lasagna noodles, cooked and cooled in cold water.
2 med. onions chopped
4 cloves garlic chopped
3 Tbsp. oil
2 cups tomato or spaghetti sauce
2 tsp. oregano leaves
1 tsp. dried basil
1 Tbsp. dried parsley (or fresh)
2 tsp. salt
1-2 cans mushroom pieces (or fresh)
1 canned drained kidney beans
3/4 lb. sliced or shredded mozzarella cheese
2 cups cottage cheese
1/2 cup grated Parmesan cheese

Saute onions and garlic in oil. Stir in tomato sauce and spices.
Cook the sauce about 15-30 minutes. Stir in mushroom and beans.
To assemble: add 4-5 noodles, 1/2 of the sauce, 1/2 of the cottage
cheese, 1/2 of the mozzarella cheese and 1/2 of the Parmesan cheese.
Repeat layers in order given. Bake at 375 degrees F for 20-30 min.
