Vegetarian Lasagna
serves 6

2 10-oz pkgs chopped frozen spinach, thawed, drained and squeezed
32 oz spaghetti sauce
3 8-oz cans tomato sauce
1 lb lasagna noodles
20 oz shredded mozarella cheese
10 oz shredded cheddar cheese
32 oz small curd cottage cheese
3 eggs

Preheat oven to 350 degrees. Thoroughly drain and squeeze spinach.
Mix together spinach, cottage cheese and eggs in medium bowl; set
aside. Set aside one can of sauce and 8 oz. mozarella.

In large roasting pan (11 x 16 x 3), layer the ingredients (3-4
layers) in the following order: spaghetti & tomato sauce, lasagna
noodles, spinach mix, mozarella, cheddar. Finish off the top with
reserved tomato sauce. Sprinkle on reserved mozarella.

Bake for 45 minutes or until a knife or fork can be easily inserted
in the noodles. Allow lasagna to firm for 15 minutes before serving.
