Bolognese Sauce

1 Tbsp olive oil
1 medium onion (chopped)
1 cup mushrooms (sliced)
1-2 garlic cloves (minced)
500g (1 lb) frozen tofu (defrosted)
28 oz (1 can) crushed tomatoes
8 oz (1 small can) tomato paste
1 cup water
2 tsp dried basil
1 tsp dried oregano
1/2 tsp salt

Shred tofu until it has the consistency of ground beef. Freezing
tofu changes its physical structure. It becomes sponge-like and
much easier to manipulate.

Saute onion and garlic for a minute or so under medium heat.

Add mushrooms and tofu and saute for a few minutes.

Add remaining ingredients, bring to a boil and then simmer for 30
minutes to an hour.
