TURKEY BOLOGNESE

3 cups chopped onion
1/2 cup olive oil
2 cups chopped carrots
3 tbsp. minced garlic
1 cup red wine
2 qt. crushed tomatoes
1 qt. cooked crumbled turkey sausage
1 qt. cooked seasoned ground turkey
2 cups Parmesan cheese
Salt and pepper
1 cup chopped parsley

Saute onion in oil until translucent. Add carrots and garlic, and
cook until softened, about 10 min.

Add wine and crushed tomatoes. Bring to a boil. Fold in turkey
products, reduce to simmer, and cook for about 25 min., until
thickened and flavors have blended.

Finish with cheese and season. Add parsley. Serve with cooked
spaghetti or polenta, or as a submarine sandwich filling.
