Carbonara Serves 4
175g/6oz smoked streaky bacon, diced 2 tbsp olive oil 250g/8oz mushrooms, sliced 1 clove garlic, crushed 3 egg yolks, beaten 140ml/quarter pint single cream 4 tbsp fresh chopped parsley quarter tsp nutmeg salt & pepper
Fry bacon in the oil with the garlic until crisp, remove the bacon, and cook the mushrooms in the same pan. Add the egg yolks and cream to freshly cooked pasta and mix well. Add the bacon, mushrooms, nutmeg, parsley and seasoning. Mix thoroughly and serve.
