Spaghetti Carbonara Serves one
4-6 oz. dried spaghetti 2 tbsp olive or canola oil 2-3 strips bacon, cut into bits 3 tbsp grated Parmesan cheese 2 eggs, beaten with a fork black pepper, to taste (I like it spicy!)
In a large pot, bring water to a boil. Add salt, if desired. Add pasta and stir until water returns to boil. Cook uncovered, stirring occasionally, for 6-8 minutes or until _al dente_ (tender but not soft). Meanwhile, heat oil in frying pan and cook bacon until crisp. Drain spaghetti, saving 4 tbsp of the cooking water. Return spaghetti and cooking water to the pot. Pour in olive oil, add cooked bacon bits, Parmesan, beaten eggs and pepper, and quickly toss. (the heat of the pasta will cook the eggs) Pile onto a warm plate, sprinkle with extra parmesan cheese and enjoy! Looks and tastes terrific with green peas or snow peas.
