Reviewer: Patrick from Leeuwarden, The Netherlands Today I prepared a lunch according to the recipe. It was quite easy to follow. I started the water to boil for the pasta at the time I started cooking the panceta and onions (I followed this option). In about 10 minutes the dish was ready. Instead of Parmesan I used aged Gouda Cheese (I live in the Nettherlands) and it was quite tasty. The next time I will try it with Parmesan or with a local aged goat cheese (much like Romano in taste and texture). For simplicity I recommend this dish. It is simple to prepare and is ready in a few minutes. An excellent dish to serve unexpected company. It goes nicely with a Chablis. Was this review helpful to you? Reviewer: Just back from Italy from NYC I thought this recipe was great, but make sure not to add so much pepper. Especially with a strong pepper, it'll become the dominant taste.
