Carbonara Sauce

1/4 pound pancetta or unsmoked bacon, diced
1 tablespoon olive oil or melted butter
2 eggs, beaten
1 ounce freshly grated Parmesan cheese, (1/4 cup)
salt and pepper, to taste
4 servings cooked long flat pasta, or more

Cook pancetta in oil or butter until crisp. In a small bowl mix
eggs, cheese, salt and pepper.

Toss hot pasta with hot pancetta and its fat. Add egg-and-cheese
mixture. Toss well until egg is cooked to desired consistency.
Serve at once with more Parmesan cheese and black pepper.

Variation: Add a little chopped onion when you cook the pancetta
or use onion instead of pancetta.

Today I prepared a lunch according to the recipe. It was quite easy to follow. I started the water to boil for the pasta at the time I started cooking the panceta and onions (I followed this option). In about 10 minutes the dish was ready. Instead of Parmesan I used aged Gouda Cheese (I live in the Nettherlands) and it was quite tasty. The next time I will try it with Parmesan or with a local aged goat cheese (much like Romano in taste and texture). For simplicity I recommend this dish. It is simple to prepare and is ready in a few minutes. An excellent dish to serve unexpected company. It goes nicely with a Chablis.

I thought this recipe was great, but make sure not to add so much pepper. Especially with a strong pepper, it'll become the dominant taste. Otherwise, this is a pretty good carbonara sauce.

This recipe is easy enough for a kid to make, but comes off as good as any restaurant. Could be a nice dinner, or a very quick and easy lunch.
