Spaghetti alla Carbonara
serves 6

1 1/2 lbs hot, cooked spaghetti
1 Tbsp olive oil
1 small clove chopped garlic
2 Tbsp butter
1 dried red chili pepper
6 pieces pancetta
2 eggs
3 Tbsp heavy cream
1/4 cup grated Parmesan cheese

Dice pancetta into very tiny bits and cook in olive oil until fat
is rendered and meat looks like brown bits. Add the dried pepper
which has been soaked in warm water and then finely chopped. Add
the garlic. Cook for 20-30 sec.. Add butter and remove pan from
heat. Beat the eggs well. Add about 2 - 3 Tbsp of heavy cream
and a few grindings of black pepper to taste. Add cooked pancetta
to the spaghetti. Don't forget to add all the cooking oil and
drippings. Stir bits into the spaghetti until well mixed. Add the
beaten eggs to the spaghetti. Sprinkle with cheese- to taste-and
serve immediately. Serve immediately.
