Tomato Meat Sauce

2 cans tomato puree
2/3 cup water
2 Tbsp. tomato paste (optional)
1 whole onion (peel removed)
3 to 4 whole celery stocks with leaves
1 to 2 whole carrots
1 or 2 kinds of meat (beef ribs, pork short ribs, meatballs, braciole, sausage)
Olive oil
4 to 5 cloves garlic, finely chopped or to taste

On medium low heat, heat about 2-4 Tbsp olive oil and brown your
choice of meats. Add garlic and slowly continue cooking meat. When
meat is browned add the rest of the ingredients. Continue to simmer
on medium or medium low for approximately 2 hours.

Remove onion, celery, and carrots with slotted spoon and discard.
Remove meat and place on serving tray. Top pasta of your choice
with sauce and serve.
