PASTA WITH MUSHROOMS AND LEEKS
Serves 2

1 large leek, sliced and washed well
4 oz mushrooms, sliced
4 rashers bacon
40g soft cheese with herbs and garlic (Boursin)
Olive oil
Salt & Black pepper
1 clove garlic, crushed
70 ml/2.5 fl oz single cream

In a skillet warm the oil and add garlic, mushrooms, bacon and
leeks. Cook for 3--5 minutes, season with salt and pepper,cover
and cook over a very low heat for a further 5 minutes or until
leeks are done. Stir in the cheese, when melted add the cream and
mix well. Serve over freshly cooked pasta shapes.
