CREAMY MUSHROOM SAUCE FOR PASTA

6 tablespoons butter or margarine
4 medium onions, thinly sliced
2 pounds fresh mushrooms, sliced
Salt and pepper
1/4 teaspoon ground nutmeg
1 to 1 1/2 cups heavy cream
Grated Parmesan cheese

Heat 3 tablespoons of the butter in heavy skillet. Over medium
heat, cook onions in it until golden. Lower heat. Simmer, covered,
for 20 minutes, or until onions are very soft. Stir occasionally.
Melt remaining butter in another skillet. Cook mushrooms in it
until tender. Season with salt and pepper to taste. Stir in
nutmeg. Add mushrooms to onions; mix well. Keep sauce hot while
pasta is cooking according to directions. Five minutes before
serving time, add cream and heat thoroughly. Do not boil. Toss
pasta and sauce together. Serve immediately with freshly grated
Parmesan cheese. Makes enough for 1 pound of pasta.
