serves 3-4 people.
1 large onion, finely chopped
2 cloves garlic, crushed or finely chopped
1 lb sausagemeat
1 can tomatoes
a good hefty pinch (or 3) of oregano
salt and lots of black pepper
Fry onion, garlic, sausagemeat and carrot in lots of oil (preferably
olive) Use a metal cooking spoon or similar to break up the
sausagemeat as you stir everything.
When the onions are softened and the sausagemeat slightly browned,
add the tomatoes, oregano and seasoning.
Simmer for a while (approx. 20 mins) until you have a good thick
sauce and servewith pasta shapes, eg macaroni, fusilli, penne,
