No-Sugar Added, Easy Pasta Sauce
1 Tablespoon olive oil
1 medium onion, chopped
3-4 cloves garlic, minced
3 cans peeled, diced tomatoes, drain 2 of the 3 cans
herbs that you like, to taste (basil, lemon-thyme, freshly ground coriander
seeds, freshly ground fennel seed)
handful of canned black olives (optional)
In a heated non-stick large skillet, splash in the olive oil. Add
the onions and cook till a bit soft. Add garlic and tomatoes. If
you're a big fan of black olives, add them now--I don't usually
bother to cut them up--they'll add more flavor if cooked in a bit.
Add herbs and salt n pepper to taste. Cover and cook over low-medium
heat for no more than 5 minutes. Serve over hot pasta.
Whir this a bit in a food processor or blender (minus the olives)
for a smoother sauce.
