Spaghetti Sauce

1/4 c extra-virgin olive oil
1 tbsp italian seasoning
1 tbsp garlic salt
1/2 tbsp dried basil
2 cloves garlic, minced
1 small onion, diced
4 large muchrooms, diced
1 green pepper, diced
6 lbs italian tomatoes, peeled and diced
4 1/2oz tomato paste
Meatballs (optional)

Heat oil in large Dutch oven. Add seasonings and all vegetables
except tomatoes. Cook over med heat until vegetables are tender,
about 5min. Add tomatoes and cook, stirring to break up, until
mixture is thick. Add tomato paste and simmer for 1 hour. Add
meatballs if desired and simmer 2 hours longer. Serve over hot
cooked pasta. Makes 6 cups.
