Vegetarian Spaghetti Sauce

2 large (20 oz.) cans tomato sauce
2 small (6-8 oz.) cans tomato paste
dried oregano
dried basil
salt & pepper
minced garlic
1 large onion, chopped
4 medium tomatoes, diced
2 green peppers, diced (you may use red or yellow for color)
1 can large ripe olives, sliced
8 oz. mushrooms, sliced

Put tomato sauce and paste in pot and add seasonings. Add garlic
and onion. Add in vegetables. Simmer for at least 30 minutes.
Better to simmer for several hours. I do NOT peel the tomatoes.
I have not found there is no problem with the skins, the chunks
remain intact. You can add any spices you want. One variation is
to add some hot pepper to add some zing. Serve over your favorite
pasta shape.
