Spinach Pasta Sauce

2 cups cleaned fresh spinach
olive oil
1 red bell pepper
1 1/2 cup sour cream
cooked pasta

Place the spinach with a little bit olive oil in a pan on low heat
and cook until it has been barley cocked. Mix in the pepper chopped
in pieces and the sour cream. Let it all simmer for about 10-15
minutes. Cook some pasta and serve.

I added salt and dipping spices, as well as a mixture of other herbs to taste. I love sour cream! I fixed this because I had some spinach I needed to use up, and a red bell pepper. It is a pretty dish.
