1 to 2 Tbsp olive oil
finely chopped onions
1 can tomatoes, or 4 or 5 peeled fresh tomatoes, peeled and diced
herbs (basil, oregano, thyme.
1 teaspoonful sugar
1 to 2 cloves garlic, finely chopped
Heat some olive oil over medium-low heat. Add onions and saute
until soft but not golden. Add tomatoes. Season with salt, pepper,
and herbs (basil, oregano, thyme, you can use italian seasoning).
Add a bit of sugar to take off the acidity and garlic. Let it simmer
for 5 to 10 minutes, covered, then blend it thouroughly, and let
it simmer for at least 30 more minutes.
