Penne W/sausage & Peppered Vodka Sauce 12 ounces dried penne pasta 2 tablespoons olive oil, heated 12 ounces hot Italian sausage, no casing 1/2 cup peppered vodka (Absolut) 1 1/2 cups tomato sauce black olives, pitted, halved large fresh basil Leaves 1 cup fontina cheese, shredded
Boil the penne for 8 to LL minutes, until barely done (one minute less than normal al dente). Over meduim heat, saute the sausage in oil until well-browned, about 10 minutes. Add garlic and stir for a few seconds. Carefully pour vodka over the meat (being careful as it ignites). When flames subside, reduce heat to low and add the tomato sauce, olives, basil and salt. Simmer five minutes. Drain the pasta and mix it gently with the sauce. Place the mixture in a buttered baking dish. Sprinkle with fontina. Bake at 375 degrees.
