Penne Vodka Sauce
1 shallot, thinly sliced
4 pear-shapped tomatoes, peeled, seeded and chopped
2/3 cup whipping cream
2 tsp chopped fresh dill
1/3 cup vodka or to taste
4-6 oz sliced smoked salmon, cut into strips, optional
ground white pepper
fresh garlic, to taste
fresh dill sprigs to garnish
Heat oil in pan-low heat. Add shallot and cook, stiring often until
soft, 3 to 4 minutes. Add chopped tomatoes and cook 5 minutes more.
Add cream, nutmeg, dill and vodka. Bring to boil for 1 minute.
Cool; add salmon.
