Penne alla Vodka
1 medium onion (chopped)
3 cloves garlic (chopped)
2 tbsp. olive oil
28 oz. crushed tomatoes
6 oz. tomato paste
1 cup heavy cream
1 cup vodka
1/2 cup prosciutto (cubed)
1/2 cup peas
1/2 cup mushroom (sliced)
4-6 fresh basil leaves
1 lb. penne
In a large pot heat olive oil over medium flame, then brown onion
and garlic. Add crushed tomatoes, tomato paste, and 6oz. water.
Stir until well blended. Cook over medium flame until slowly
bubbling, making sure to stir often. Once bubbling, stir in heavy
cream, vodka, prosciutto, peas, and mushroom. Season to taste with
salt, pepper, and basil.
Cover and let simmer on low heat for 30 minutes. Continue stirring
Separately, fill half of another large pot with water and bring to
a boil. Once boiling, stir in penne and cook until al dente.
Drain pasta, cover with sauce, and sprinkle with freshly grated
parmesean or pecorino romano cheese.
Makes 4-6 servings, depending on size.
