Salsa Di Noci (Italian Walnut Sauce)
Serve 6

1 1/4 cup/ 4 oz./ 125 g walnut pieces
1/3 cup / 1 1/2 oz/ 45 g pine nuts, toasted
1/4 cup/ 1/2 oz /15 g soft white breadcrumbs
2 T. water
1 small clove garlic, chopped
1/2 cup/ 4 oz/ 125 g ricotta cheese
2 T. grated parmesan cheese
1/2 cup 4 fl. oz./ 125 ml extra virgin olive oil
salt, to taste

Place all ingredients in food processor and process to think sauce,
adding a little more olive oil of too thick. Transfer to bowl.
(Cook pasta of your choice and dive it onto warm plates.)

Top each serve immediately with 2 heaping T. walnut sauce. Serve
remaining sauce at table with cheese.
