Zucchini and Pepper Pasta

250g ribbon noodles, cooked
4 baby zucchini
1 green bell pepper, roasted and peeled, then sliced into julienne strips
1 red bell pepper, roasted and peeled, then sliced into julienne strips
1 orange bell pepper, roasted and peeled, then sliced into julienne strips
1 onion, finely chopped
2 cloves garlic, crushed
1 tsp oregano
salt and pepper to taste

Slice the zucchini into julienne strips and salt and set aside for
15 minutes. Meanwhile, fry the onions and garlic in olive oil till
soft. Discard the juice that has formed over the zucchini and saute
till just cooked( but not mushy). Add the peppers and the oregano
and salt and pepper to taste. Heat through and mix with the pasta.
