ANCHOVIES AND GARLIC SAUCE OVER PASTA

(Typically served on Good Friday and Christmas Eve) -Serves 4
2 garlic cloves Oil 300 g (10-1/2 oz.) anchovies (or one can) Salt and pepper Cooked spaghetti, for four, reserve some cooking liquid
Saute the whole garlic in the oil then remove it as soon as it gets golden in color, add the anchovies and a couple of spoonful of the water you used to cook spaghetti and let them melt (it takes only a few minutes). Add salt and pepper to taste.

Anchovies are the most underrated fish "condiment."
This recipe is perfect for anyone with a love for Southern Italian food, ie, salty and gutsy.
