Baked Ziti

1 lb package ziti, cooked and drained

1/4 cup olive oil
1 cup onion finely chopped
1 garlic clove crushed
1 can Italian style tomatoes (2 lb.3 oz)
1 can tomato paste (6 oz.)
2 Tbsp. fresh chopped parsley
1 Tbsp. sugar
1 tsp. oregano
1/2 tsp basil
1/4 tsp pepper

2 cartons Ricotta cheese (15 to 16 oz each)
1 package mozzarella cheese (8 oz)
1/3 cup grated Parmesan cheese
2 eggs
1 Tbsp. fresh chopped parsley
1 tsp. salt
1/4 tsp pepper

Saute onion in the oil until tender, stir in garlic and cook a
minute or two. Add remaining ingredients and cook and simmer to
blend flavors. If you wish you can prepare sauce ahead of time.
Blend cheese mixture together. Also this can be made ahead of time
if desired. Place cooked ziti in a large oblong baking pan. Layer
the ziti with sauce and cheese . Bake in a 350F oven about 35 to
45 minutes uncovered until well heated. Yield: 8 to 10 servings.
