Couscous Orange

1 1/4 cup fresh orange juics
1 cup reduced sodium chicken broth
1 tablespoon margarine
1 teaspoon grated orange peel (optional)
1/2 teaspoon salt (optional)
1 box (10 ounces) couscous
nonstick cooking spray
1 large red bell pepper, finely chopped (about 1 cup)
2 green onions with tops, sliced (about 1/2 cup)
2 cloves garlic, minced
Place juice, broth, margarine, orange peel and salt, if desired, in
medium saucepan; bring to a boil over high heat. Stir in couscous;
cover and remove from heat. Let stand 5 minutes.
Meanwhile, spray large nonstick skillet lightly with cooking spray.
Heat skillet over medium-high heat until hot. Add pepper, onions
and garlic. Cook and stir 2 minutes or until pepper is softened.
Fluff couscous lightly with fork. Stir in pepper mixture.
Serve immediately.
Makes 6 servings.
